Robert Burns, also known as Rabbie Burns, is the national poet of Scotland. Born in Ayrshire on January 25 1759, his birthday is celebrated worldwide.

  • 6.30pm: Bar opens
  • 6.50pm: All be seated after collecting a dram of whisky, The Selkirk Grace
  • 7.00pm: The Haggis makes its grand entrance preceded by the skirt of the bagpipes. This is followed by the Robert Burns poem "Address to a Haggis"
  • 7.15pm: First course served - a delicious 'cock-a-leekie' soup. Mix and mingle, those in kilts can show off their knees. The whisky, a nice single malt, is to be kept for the toast 'To the Haggis'. If for any reason you don't like whisky, give it to someone who does, but make sure you have a glass of something ready. Then raise your glasses for the toast. Meanwhile - In the kitchen the Haggis is butchered and made ready.
  • 7.30pm: Main course served - preceded by a traditional taste of Haggis.
  • 8.15pm: Dessert served - your whisky glasses will be topped up ready for the 'address to the Lassies' followed by a toast.
  • 8.30pm: With newly topped up glasses the Lassies Reply. (Lassies Revenge) followed by, yes, another toast.
  • 8.45pm: The immortal Memory and of course, a toast to Scotland's national poet.
  • 9.00pm: Ceilidh. All the favourites - Dashing White Sergeant. Strip the Willow, Gay Gordons, Circle Waltz.
  • 9.30pm(ish): The formal part of the night ends with Auld Lang Syne. Robert Burns was a great 'ladies man' and the traditional address to the lassies reflect this. Often irreverent but always to the point, it's a highlight of the evening. With the help of Heather Johnston to show the Sassenachs how to do it. The night is young and the music continues with a more contemporary theme and the bar is open.
